- 300g of the finest chocolate of your choice ( I’m a dark fan but milk or white will work well too)
- 100g Caster Sugar
- 100g Butter
- 3 eggs
- 200g almond flour or Spelt if you’re just wheat intolerant.
- 1tsp Vanilla essence
- Handful chopped Choc chips/Hazelnuts/Raspberries/All mentioned (optional)
- If you’re feeling adventurous you can add one of the following : orange zest, grated stem ginger or a couple of drops of rose water.
- To start, put the chocolate and butter into a bowl and melt over a saucepan of simmering water.
- While the chocolate mix is doing it’s thing, get started with with eggs, sugar and vanilla essence . Pour all into separate mixing bowl and give a good whisk till they’re fully combined.
- Next take the chocolate off the heat as soon as it’s fully melted. If it gets too hot make sure to leave it to cool for a minute or two because the heat will curdle when added to the egg mixture .( brownies á la scrambled eggs!)
- Pour the choc mix into the eggs and sugar and give a good stir till it’s a glossy texture.
- Now add the remaining ingredients and stir.( Flour and other fillings if adding.)
- Line a medium sized dish pan with greaseproof paper and pour brownie mix in.
- Smooth out and pop into an oven at 180 degrees for 15-20 mins depending how gooey you like them.
